Best Healthy Recipes Today

I recently created a few dishes that everyone was asking for recipes - so thought I would share on here.

The first recipe was from leftover sushi wasabi and pickled ginger - just what do you do with that stuff? Here is an option.

SUSHI TURKEY MEATBALLS

Ingredients
- 1/4 cup pickled ginger
- 1 T Wasabi
- 1 Pound Ground Turkey
- Two egg whites
- Soy Sauce
- Panko Bread Crumbs
- Salt and Pepper to taste

- Put the ginger, wasabi, egg whites, and soy sauce into processor/blender to create a smooth paste
- Add the paste, ground turkey, and bread crumbs together and mix until well blended
- Form into meat balls
- Fry or bake until done

Note: These taste like tuna sushi :)


VEGETABLE QUICK BREAD

This recipe was born out of desperation to use leftovers :) To my friends surprise when I gave them the recipe. Yes there is cauliflower and tofu in there!

1) Make dinner hash with cauliflower, onion, sweet potato, garlic, and potato
2) With the left over from (1) add tofu and make a curry with coconut milk, curry and other spices
3) With the left over from (2) make a cream soup with almond milk, chicken bullion and bacon fat
4) With left over from (3) make a banana bread but instead of banana put in a cup of soup be liberal with the cinnamon and nutmeg.

Getting out - Keep Moving

Hey there - Happy Friday!

Today is good - I am wearing jeans that I'd recently put in the "too-small" pile which demonstrates to me (once again) that healthy eating and exercise get results! My simple formula for success.

I have been working out 3-4/week and maintaining 1200 cal diet. For breakfast I have abandoned tofu (shock!) and now having a protein shake. It's much faster to make and so easy to do with apple juice or frozen fruit. Salads for lunch every day. Whatever protein and veg for dinner. That's the plan.

Tonight I'm going out to a Disco party! Local band/bar - should be fun. Disco is my main play-list when I'm biking. So energizing! When disco was hot and Travolta was dancing in the films I was living in Mexico; hitting the dance clubs practically every night. Wow - that was a L-O-N-G time ago! Very fun times and great memories.

Giving It All Away

Anyone out there a Gilmore Girls Fan? Did you see the latest updates on Netflix? Emily Gilmore decides that none of her old things "give her joy" anymore and makes a massive purge of her wardrobe, house, and life.






In a similar light - the past few weeks I have gone through my closets and tossed out everything that I didn't love all those things that I wore just because they could fit me. Plus I tossed everything that was too big for me at this very moment. Everything. There are no more size 18, 20, 22, or 24 in the house! There is no going back there - only down for me thank you.


I put al the dress clothing on hangers and dropped it off at Dress for Success in Chicago. Their website said they were in great need of plus sized business appropriate clothing. Saturday was a lucky day for them. When I did the drop off the volunteer was so happy - that  made me happy too!


Today checking out OA meetings. See if that makes sense for me...

New Year - New Life

The sun is slowly rising over the parking lot and I'm taking a tad of a break in my morning to dash out this blog update. It's a great view to reflect on the massive changes that have happened over the past two years. Like the sun coming up on a new day - I feel renewed this year.


Over the holidays I was fortunate to head to Colorado for some R&R. I did partake in an activity totally new to me - Dogsledding! Boy these little dogs love to run and were a great example of happy and strong! More importantly I had lots of time to reflect on where I've been and where I'm going!



2015 was my year to turn over a new leaf and make healthy choices for my life. It wasn't a New Year's Resolution - it was a step-change in my behavior and the start of new choices and habits. Hopefully for the rest of my life - which will be a tad longer as I've gotten healthier! My focus was getting stronger - which at the time meant physically stronger. I was single minded in my focus and as a result lost nearly 90 pounds that year.

Stress... Am I still Standing?

I like to think that I can handle a great deal of stress. Often people that work with me or close friends have said something to that effect. Here lately - my stress is at an all time, lifetime, high.


The fact that I haven't gained another 40 pounds is amazing to me - as I'm fighting off the burning desire to consume an entire package of sugar cookies, bags of candy or other very unhealthy behaviors.

So what's the source of stress - oh so many. I went out to a few websites and took online tests for level of stress.  This one, looks at events in life that cause stress - like buying a new house or losing a job. I scored between 540 and 700 points the last two times I took this test. They say anything over 300 points means more than 80% chance of major illness related to stress.

Then I looked at this site and free anxiety test. This one looks at behavior and physical response to stress. On this I scored 45 out of 168 - which I thought was low, but they say anything over 28 is signs of Depression, Anxiety, and Stress.


OK so I guess that I knew all that and really didn't need an online test to tell me.


The thing is - to eliminate sources of stress can sometimes be an even more stressful activity all by itself! Definitely not an overnight thing. :(


But I have realized as I've been on this journey to get healthy - that losing weight is only one component of that. Being physically strong is not the only way a person can be strong. Making the changes in life and bearing up under the plethora of changes is another way to be strong. Unfortunately (or fortunately) a skill that we don't practice often.


Just to keep it interesting - I will be traveling at least 5 of the remaining 7 weeks of the year....


I hear exercise is good for getting a positive mental attitude going!
