Best Healthy Recipes Today

I recently created a few dishes that everyone was asking for recipes - so thought I would share on here.

The first recipe was from leftover sushi wasabi and pickled ginger - just what do you do with that stuff? Here is an option.

SUSHI TURKEY MEATBALLS

Ingredients
- 1/4 cup pickled ginger
- 1 T Wasabi
- 1 Pound Ground Turkey
- Two egg whites
- Soy Sauce
- Panko Bread Crumbs
- Salt and Pepper to taste

- Put the ginger, wasabi, egg whites, and soy sauce into processor/blender to create a smooth paste
- Add the paste, ground turkey, and bread crumbs together and mix until well blended
- Form into meat balls
- Fry or bake until done

Note: These taste like tuna sushi :)


VEGETABLE QUICK BREAD

This recipe was born out of desperation to use leftovers :) To my friends surprise when I gave them the recipe. Yes there is cauliflower and tofu in there!

1) Make dinner hash with cauliflower, onion, sweet potato, garlic, and potato
2) With the left over from (1) add tofu and make a curry with coconut milk, curry and other spices
3) With the left over from (2) make a cream soup with almond milk, chicken bullion and bacon fat
4) With left over from (3) make a banana bread but instead of banana put in a cup of soup be liberal with the cinnamon and nutmeg.

Work, Work, Bike, Travel, Bake...


Keeping it in check...not stress eating :) The other night two friends from work called to talk late in the evening and as a result I had some restless sleep. I'm so much better when I get at least 7-8 hours of restful sleep - last few days I've been below 4hrs! ARGH...

Day 32 - Today a visitor to the office brought me a present. Most unexpected and so needed! Now this little beauty graces my workspace. Giving me flowers every day! Little surprises and acts of kindness like this can make such a big difference!
Tuesday: Net Calories  959; steps 5,928


Day 33 - 5:30AM workout with my trainer. Always a great way to start the day. Know that my energy is high!

Day 27 - 30: Biking and Baking

Continuing onward in the 100 day challenge...one day at a time! Some good days here recently. Always better when I'm not traveling...


Day 27 - Thursday

Another day sitting at the desk for work - but ended with a good hour working out with my trainer! Followed by the most boring tilapia/spinach dinner you can imagine (not my night to cook.)

Day 27: Net Calories  839; steps 8,656
Day 28 - Friday

Rest Day - Getting ready for the long ride tomorrow! A tad too many calories today yet net still under target :)

Day 28: Net Calories  1160; steps 9,407

Days 3-4/105: Work out and Reward

Onward...


Day 3 - I took off to the Club (aka Five Seasons in Northbrook) and enjoyed one of the group classes. This was toning - and standing in front of the mirrors was a bit tough to take. Bypassed the pasta my daughter made for dinner. Hydrated and cleaned house. Checked off for the day complete. Also made plans for a 30 mile ride this weekend. So all good.


Day 3 summary: Net Calories 607; steps 10,415




Low Fat Low Sugar Apple/Pear Cake w/ recipe below
Day 4 - Today I just had to use up those pears and apples picked over the weekend. Created the low-fat, low-sugar cake recipe below. Reward! Turned out rather well - super moist. Looks yummy right? Next time will reduce the milk if using pears because they are much moister than apples. I had a totally veggie dinner to allow for a piece of this cake.

Workout today included going for a long walk outside; just love the fall crispness :) Food on track.

Changed up a girls night out date that was wine/dine - but is now working out and sauna :)

Day 4 Summary: Net Calories 760; Steps 12,210



Teresa's Low-Fat Apple/Pear Cake Recipe 

  • 1.5 pounds firm apples or pears sliced thin
  • 1 egg and 1 egg white
  • 1/3 cup light brown sugar or lower cal option use sugar substitute with 1 Tbl Molasses
  • lemon zest
  • salt
  • 1 cup wheat flour
  • 1/4 cup no-sugar almond milk
  • 3 tsp baking powder
  • Nutmeg and Cinnamon to taste
  • Optional Raw sugar to sprinkle on top
  • Bake - 350 F for 30-40 minutes
  • Nutrition estimate: Should be ~115-135 Cal/Piece

Food Choices - Old Favorites and New Habits

The other day I was mall-walking and the aroma from the Cinnabon was so overwhelming. It took me back to my childhood and a rich sugary-cinnamon breakfast treat. I recall some childhood foods which I would never dream of eating today nor ever serving to my kids.  One of these was a summertime treat from my Grandmother. She would place a generous portion of rich vanilla ice cream onto Rice Crispies for our breakfast! The other was a treat breakfast my  mother would prepare which centered around brown sugar/butter broiled onto white toast. A fast homemade Cinnabon! This would be 1/4" thick sugary sweetness. You can find the recipe here. My mom must not have been alone in preparing this rich treat - plus she always put a few eggs on the side, for balance :)
