Day 9 - 26: Travel, Eating :( - Healthy Baking



Fall is here! Yeah - I love that feeling of crispness in the air, color in the trees, diving under comforters, and starting fires! Downside lately has been way too much travel for work and dealing with some stressful home front activities. As noted in the daily summaries below - not too back but not great in terms of a strong finish...

Full Irish Breakfast (Wiki)


I cannot fully share the lure and dangers of the full Irish Breakfast... this is more than 100% of my daily calorie intake. The hotel I was staying at only had buffet no other options feasible. Practically no part of it is healthy - save the stewed tomato and cup of tea. A full fry-up contains on around 1,300 calories, which is an OMG moment. What would you eat here? Not to mention that there was also a bread bar (muffins, toast, etc.) Here's the full list:



  • 2 rashers of bacon (168 calories, fat 10.8g)
  • 2 sausages (412 calories, fat 30g)
  • 1 fried egg (80 calories, fat 5g)
  • 1 fried white pudding (80 calories, fat 5g)
  • 1 black pudding (101 calories, fat 5.6 g)
  • 2 tomato’s (120 calories, fat 9g)
  • Baked Beans (200 calories, fat 7 g)
  • Handful of fried mushrooms (44 calories, fat 4.4g)
  • 2 toasts (white) with butter (180 calories, fat 5.2g) or 2 pieces soda bread (428 calories, fat 7.4g)
  • Cup of tea

Day 21-23: Lots of Gardening; Baking

After traveling I tend to spend time baking. Above is a photo of a pumpkin spice bundt cake. That wasn't so healthy and I didn't eat that. I also created a healthy recipe for this week - this quick bread was pretty fat free and with a sugar substitute the calories I think were pretty low. I took it into work and it was devoured pretty quickly!






Wheat-Oat-Teff Applesauce Raisin Bread

  • 1 cup sugar substitute
  • Egg whites equivalent to 2 eggs
  • 1/2 cup coconut oil
  • 1 1/2 tsp vanilla
  • 1/2 cup teff grain (ground to flour)
  • 1/2 cup oats
  • 1 cup wheat flour
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp all spice
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 3/4 cup applesauce
  • 1/2 cup raisins
  • Preheat oven to 350F, mix sugar, eggs, oil and vanilla until creamy. Mix dry ingredients together. Add sugar mixture, applesauce, and dry ingredients and blend well. Fold in raisins. Pour into loaf pan. Bake for 55 - 60 minutes

Tonight going to workout with my trainer and will stay to do some cardio and sit in the sauna too! Saturday going on a ~25-30 mile bike ride. Sunday maybe kayaking or much more gardening? something active.
